Wild Mushroom and Truffle Pasta
An indulgent dish that brings together the earthy richness of wild mushrooms, the luxurious flavor of truffles, and the silky texture of our premium Sicilian pasta.
Ingredients (Serves 4):
- 400g premium Sicilian pasta
- 40g dried wild mushrooms (porcini, chanterelles, etc.), soaked and cleaned
- 2 tbsp Pamako olive oil
- 2 cloves garlic, finely chopped
- 50ml white wine
- 200ml heavy cream
- 1 small truffle or high-quality truffle oil (optional)
- 50g grated Parmesan cheese
- Fresh thyme or parsley for garnish
- Salt and freshly ground black pepper
Instructions:
- Cook the Pasta: Prepare the pasta according to the package instructions until al dente. Reserve 1 cup of pasta water.
- Sauté the Garlic: Heat Pamako olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant.
- Add Mushrooms: Stir in the soaked and cleaned wild mushrooms. Cook for about 10 minutes, stirring occasionally.
- Deglaze the Pan: Pour in the white wine and let it reduce by half, intensifying the flavor.
- Prepare the Sauce: Lower the heat and stir in the heavy cream, Parmesan cheese, and some of the reserved pasta water to create a creamy sauce. Simmer gently for 2-3 minutes.
- Combine and Season: Toss the cooked pasta into the skillet, mixing well to ensure every strand is coated in the sauce. Season with salt and freshly ground black pepper to taste.
- Add a Touch of Truffle: For an extra layer of luxury, shave fresh truffle over the dish or drizzle with truffle oil. Garnish with thyme or parsley.

Stuffed Mushrooms / Peppers with Herb and Olive Oil Drizzle
A delightful appetizer that highlights the earthy flavors of wild mushrooms, enhanced with the richness of Pamako olive oil and fresh herbs.
Ingredients (Serves 4 as an appetizer):
- 12 large wild mushrooms (e.g., portobello or king oyster), stems removed
- 3 tbsp Pamako olive oil
- 15g dried wild mushroom mix or morels, soaked and chopped
- 1 small onion, minced
- 1 clove garlic, minced
- 50g breadcrumbs
- 30g Parmesan cheese, grated
- 1 tbsp fresh parsley, chopped
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
Instructions:
- Prepare the Oven: Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- Sauté the Filling: Heat 1 tbsp of Pamako olive oil in a pan over medium heat. Sauté the hydrated wild mushrooms, onion, and garlic until softened. Season with salt and pepper.
- Mix the Stuffing: In a bowl, combine the sautéed mushroom mixture with breadcrumbs, Parmesan, parsley, and thyme. Mix well to create a flavorful stuffing.
- Prepare the Mushroom Caps: Brush the mushroom caps with Pamako olive oil and arrange them on the baking tray. Spoon the prepared stuffing generously into each cap.
- Bake: Drizzle the stuffed mushrooms with the remaining Pamako olive oil and bake for 20-25 minutes, or until golden and tender.
