30g Dried Morels, rehydrated1 Onions, finely diced
75g Butter (Plant Butter)
1 bunch chopped spring onions
1/2kg Potatoes
Fine Sea Salt
Wild Rosemary

Steps
Firstly rinse the mushrooms and then hydrate them in hot water (cover the mushrooms). Let it stay for 15-20 minutes. Melt butter in hot pan, and add onion and mushrooms. Cook until onion is translucent. Add water from mushrooms and cook until desired thickness is achieved (3-10 minutes, it depends on the taste). Add the spring onions, season with salt and Wild Rosemary. Cut the potatoes, toss in oil and season with salt. Place in a buttered gratin dish and cook in the oven at 225 degrees for about 30 minutes.
